Storage
Dry/Ambient conditions are recommended. Store less than 75% relative humidity. Do not store under refrigeration.
 
Functionality
Flowability: It can be  exposed to high-moisture conditions without caking or lumping. When added to solutions, it dissolves easily and blends uniformly. Economy: Use as a direct replacement for other milk solids in many applications. It reduces cost to as little as one-third that of NFDM. 

End-Product quality: Improve the appearance, color, flavor, and texture of baked goods. Sweetener replacement: Reduce levels of sweeteners (sucrose or corn sweeteners) in bread.
